Instant Pot Copy Cat Chipotle Barbacoa

Every Friday night my family and I eat outside the home for dinner.  My husband and I decided this at early stage in our relationship that every Friday of the week I got to get a night off of cooking! This is tradition I kept from my family, so I figured ” hey this sounds like a good idea” to pass along in my family and keep.

My husband agreed so now after 7 years of marriage we do enjoy a night out to eat with the kids every Friday!

Can you guess where we eat at almost every Friday night?

Chipotle restaurant!

We eat at Chipotle almost everyday night, its sort of a tradition now and everyone loves what they eat. The servers all know us and we always get a happy greeting of familiar faces every time we walk in. My daughter Leila is gluten intolerant so we find that it is easy to accommodate her when we eat at Chipotle. Plus, as a mom I love that most of their ingredients are healthier then most sit down restaurants.

Since we have all love Chipotle Restaurants barbacoa I decide to recreate this delicious recipe. I decided to browse around on Pinterest so I stumbled upon this recipe click here . A few years ago I used to manage a freezer meal cooking club, I organized it for two years and truly loved it. I stopped oragnaizing the cooking club because life just too busy but I truly did miss it.

Recently a friend and I decided to get together once a week and prep freezers meals for our Instant Pots. I knew I had to convert this recipe from a slow cooker recipe to a instant pot recipe. I was up for the challenge. So I adapted the recipe a bit to make it freezer and Instant Pot ready.

Not only was this recipe super simple to assemble but it was super easy to throw in all the ingredients in the instant pot. I simply dumped all the ingredients in my freezer friendly Ziploc bag, sealed it tight, and stored it in the freezer.

A few days later I thawed it out in my stainless steal Instant Pot bowl for a bit. Once semi thawed I dumped the bag out into the instant pot, closed the lid and set up my Instant Pot on the manual function for 120 min  1 hour 20 min) and whola it was done

Shredded and delicious!

This recipe so simple and hassle free. Its basically a recipe where you dump everything in  a bag, freeze for later, and, then cook in your handy dandy pressure cooker aka instant pot, or even slow cooker.

I love that this Copy Cat Chipotle Style Barbacoa.  t taste just like the barbacoa meat they served at our favorite restaurant. Its healthy, free of any nasty overly processed ingredients if you buy organic ingredients to make this recipe. I personally follow a low carb/keto diet. This recipe falls perfectly in those types eating lifestyles, as well as paleo too.

You can make this recipe into anything with the savory delicious barbacoa meat. The night I made this meal for my family I made two different types of tacos. My kids and husband enjoyed this recipe with corn tortillas, topped with salsa and avocado with rice. I choose to make my tacos into lettuce cups , topped with salsa, and avocado as well. Making the way I ate my barbacoa into low carb tacos.

Boy oh boy did everyone scarf their tacos down like they never ate before, I enjoyed my healthier version too.

As I mentioned earlier; my friend and I got together to make this Instant Pot Copy Cat Chipotle Barbacoa freezer meal, but also made 4 other meals

All of these recipes can be made with a slow cooker too, you would just need to cook for 6-8 hours. However; you can make them all ahead for freezer meals and follow the same steps.

Instant Pot Copy Cat Chipotle Barbacoa
I am a big fan Chipotle's Restaurant shredded Barbacoa meat. I decided to recreate this recipe and make it into a Instant Pot Freezer Friendly Meal. This recipe is a perfectly balance with enough heat and mild enough for the kids to enjoy! I love making tacos, burritos, salad bowls, and even rice bowls with savory meat.

Instructions
  1. Place the broth, chipotle chiles in adobo sauce, garlic, apple cider vinegar, lime juice, dried oregano, cumin, sea salt, black pepper, and ground cloves in a large Ziploc freezer friendly bag
  2. Place the beef chunks in the Freezer bag along with all other ingredient (make sure all the excess at on meat is trimmed) Add the (whole) bay leaves. Mix all the liquid and meat together, making sure the meat is covered with the marinade.
  3. Once all the above steps are done seal the Ziploc bag making sure any excess air is out of the bag, this will help with prevention of freezer burn. Now place the bag in the freezer till ready to reheat in the instant pot
Instant Pot Directions
  1. Thaw out the freezer meal in your Instant Pot stainless steal holder. I like to let mine be semi frozen so I don't have to worry about adding liquid but you can also thaw completely to shorten the cooking time.
  2. Next, dump all the contents in the stainless holder, Place the instant pot lid on the base, close, and then make sure the pressure valve is sealed. Then set the Instant Pot to the manual function for 120 min.
  3. Lastly, once all the meat is done cooking and pressing slowly open the lid and spread apart the meat with a fork. Take out whatever herb stems are left and now your ready to enjoy this tasty recipe!
Recipe Notes

Some Instant Pots aka pressure cookers take longer to cook then others. So keep in mind you might have to restart it for a additional 30 minutes if you find it is not easily shredded after the 12o min. This is a tough cut of meat so it takes time to let it break down. However you will have a perfectly shredded copy cat chipotle style meat in less then 2 hours! 

 

Now that is a time saving winner!

    I love Chipotle but I have never had the barbacoa. I will definitely try this recipe though because it looks good and sounds simple enough. I will try it out in my crockpot. I don’t have an Instant Pot yet. Waiting on a lightening deal. LOL

    This looks so delicious. I don’t have an instant pot, but could probably adapt this to my Crock Pot. Barbacoa is what I always order at Chipotle, so it would be nice to be able to make it at home.

    I might be the only non Chipotle fan around but I do love Mexican food so this recipe has my name written all over it. I much prefer to make dishes at home so I know what is going in them and can tweak the spice factor to my taste.
