Easy and Delicious Vegan Protein Pancakes

Vegan Protein Pancakes are truly one of my favorite breakfast pancakes to enjoy. I like that they are super easy, fast , healthy, and, delicious. I am currently on a vegan challenge. My first meal I wanted to replace was the non-vegan pancakes I was enjoying for breakfast a few times a week. I was using a pre made mix before that I absolutely love but it wasn’t compliant with my Vegan challenge.

I found this recipe one morning while I was watching YouTube. The challenge for me while living the Vegan life was protein intake.  Since I am no longer having meat in my meals. I figured I needed to work protein in each of my meals throughout the day. Especially since I participate in cross-fit a few days a week, as well as strength training.

 

This little mamma didn’t want all her hard work to go away, so as fate would have it, I found my answer while watching a YouTube vegan tutorial on vegan foods. I had all the ingredients in my pantry, yes even the vegan protein too. My husband is having gut issues so I switched him to a plant based pea protein (click here  to see which one we use) and he his tolerating it really well.

One of the things I love is this recipe is gluten free as well. Which I wanted to stay away from as much gluten as I can since I normally do in my non Vegan everyday diet. My daughter is gluten sensitive so this meant she can enjoy them too. This recipe just seemed like the perfect fit for my family, its vegan and gluten free!!

I decided to add a few more ingredients to this recipe so I added cinnamon and Enjoy Life Dairy Free Chocolate Chips. I also already had these in my pantry because we also try to be dairy free since my family doesn’t do too well with dairy. Plus these dairy free chocolate chips are so tasty! I have tried many non dairy chocolate chips and these are 100% worth the splurge.

Easy and Delicious Vegan Protein Pancakes
Super easy and quick to make. These Vegan protein pancakes are packed with clean ingredients, nutrient dense and will help you get your daily dose of good quality protein! I like to top my pancakes with dairy chocolate chips! Yum!!

Instructions
  1. Place all ingredients in a blender (Nutribullet, or Vitamix will work great too). Blend all ingredients together till well combined.

  2. Mean; while spray your pan with cooking oil, then heat up your pan or griddle. Once nice and hot use a 1/3 measuring cup to portion out your batter. Place the batter in the cup on the hot griddle, Then add your favorite topping of choice. I like Enjoy For Life Chocolate chips but you can use berries/fruit, coconut shreds even nuts. Place your topping of choice on each pancake.

  3. Let vegan pancake cook till you see bubbles on top of the batter and the batter becomes firm. Then flip your vegan pancake to cook the other side for 1-2 min, then flip back to the other side for 30 second.
  4. Now pancake is all done and ready to be enjoyed!

Recipe Notes

Vegan protein pancakes makes about 8-10 serving. I like to double the batch and store in glass container so I can have a fast, easy, and, healthy breakfast for the kids and I. This recipe will stay good for 5 days in the refrigerator.

To reheat just get out a small pan, spray with cooking oil and place Vegan Protein Pancakes on the pan and reheat 1-2 min.

My kids love this recipe, its east, healthy, and, kid approved for those busy mornings.

You can also omit the protein powder and you will still have a tasty pancake!

    I love banana based pancakes! I would so be down to turning this into a waffle recipe! Waffles are my preferred breakfast option and it’s always good to have a few vegan recipes up your sleeve.

    Dang girl, this makes me me want to be vegan. These look amazing and easy enough for me to try. I have been going carb free lately and been trying different recipes lately. While this is not entirely carb free, I think this might work to mix up some of my limited breakfast options.
